- 1 cup orzo pasta
- 2 tablespoons olive oil
- 2 salmon fillets
- 1 lemon (juice and zest)
- 1 cup heavy cream
- 2 cloves garlic (minced)
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Cook orzo pasta according to package instructions; drain and set aside. Pat salmon dry with a paper towel and season both sides with salt and pepper. Zest and juice the lemon and mince the garlic.
- In a skillet, heat olive oil over medium heat. Sear the salmon fillets skin-side down for 4–5 minutes on each side until golden and cooked through. Remove from skillet and flake into large pieces.
- In the same skillet, sauté minced garlic for about 30 seconds. Add heavy cream, lemon juice, and lemon zest. Simmer for 2–3 minutes until slightly thickened.
- Add cooked orzo and flaked salmon to the skillet. Stir to combine and heat through. Season with salt and pepper to taste. Serve warm, garnished with fresh parsley.
Notes
Use the same skillet for the sauce to incorporate flavors from the salmon. Reheat gently with a splash of water or broth if the sauce thickens too much.
