Description

Ingredients

  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 4 cups vegetable or chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the orzo and cook for 2-3 minutes, stirring frequently.
  4. Pour in the broth and bring to a boil.
  5. Add the broccoli florets to the pot and reduce the heat to a simmer.
  6. Cook for about 10-12 minutes until the orzo is al dente and the broccoli is tender.
  7. Stir in the heavy cream and shredded cheddar cheese until melted and creamy.
  8. Season with salt and pepper to taste.
  9. Serve warm.
