- 1 cup orzo pasta
- 2 cups broccoli florets
- 4 cups vegetable or chicken broth
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in the orzo and cook for 2-3 minutes, stirring frequently.
- Pour in the broth and bring to a boil.
- Add the broccoli florets to the pot and reduce the heat to a simmer.
- Cook for about 10-12 minutes until the orzo is al dente and the broccoli is tender.
- Stir in the heavy cream and shredded cheddar cheese until melted and creamy.
- Season with salt and pepper to taste.
- Serve warm.
