This creamy skillet dish combines heavy cream, tangy sun-dried tomatoes, and wilted spinach, creating a rich and flavorful sauce perfect as a side or light main dish.

  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for garnish

Instructions

  1. Heat a skillet over medium heat. Mince the garlic and chop the sun-dried tomatoes. Rinse and dry the spinach.
  2. Add olive oil to the skillet. Sauté garlic for 30-60 seconds until fragrant.
  3. Stir in chopped sun-dried tomatoes and cook for 2-3 minutes.
  4. Add fresh spinach, cooking until wilted (about 2-3 minutes).
  5. Pour in heavy cream and sprinkle Italian seasoning. Stir to combine and lower heat to a gentle simmer.
  6. Simmer the sauce for 5-7 minutes until thickened, then taste and season with salt and pepper. Serve warm, garnished with Parmesan.
