  • 1 can (15 oz) white beans, rinsed and drained
  • 2 cups uncooked lasagna noodles, broken into pieces
  • 2 cups spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Italian seasoning to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Sauté onion and garlic until soft, about 3-4 minutes.
  2. Add chicken broth, white beans, and shredded chicken; bring to a boil.
  3. Stir in lasagna noodles and cook until al dente, typically 8-10 minutes.
  4. Add spinach, ricotta, and heavy cream; stir until well combined.
