- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 lemon, zested and juiced
- Salt and pepper to taste
- 2 tbsp olive oil
- 8 oz spaghetti
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Season the chicken pieces with salt, pepper, and lemon zest.
- Dredge each piece of chicken in flour, dip in beaten eggs, and coat with breadcrumbs.
- Place the chicken bites on a baking sheet, drizzle with olive oil, and bake for 15-20 minutes until crispy and golden.
- Cook the spaghetti according to package instructions, then drain and toss with lemon juice and grated Parmesan.
- Serve the crispy chicken bites on top of the spaghetti, garnished with fresh parsley.
Notes
For extra crunch, double-dip the chicken and use panko breadcrumbs for a crispier texture. Serve with a light salad or garlic bread.
