Deliciously crispy bites of fluffy eggs and grated potatoes, perfect for a snack or brunch.


Ingredients

  • 2 large potatoes, peeled and grated
  • 4 eggs
  • 1/2 cup milk
  • 1/2 cup grated cheese (cheddar or your choice)
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped bell pepper
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a bowl, mix the grated potatoes with salt and let them sit for 10 minutes to draw out excess moisture.
  2. Squeeze out excess moisture from the potatoes. In a separate bowl, whisk together the eggs, milk, cheese, onion, bell pepper, salt, and pepper. Combine the potato mixture with the egg mixture until well mixed.
  3. Heat oil in a frying pan over medium heat. Spoon small amounts of the mixture into the pan and flatten slightly. Cook until golden brown on both sides, about 3-4 minutes per side.
  4. Remove the bites from the pan and drain on paper towels before serving. Enjoy the crispy, cheesy goodness!

Notes
