A simple and comforting side dish with crispy roasted cauliflower smothered in melted cheddar cheese, perfect for weeknight dinners or gatherings.

- 1 head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly oil it.
- In a large bowl, combine the cauliflower florets, olive oil, garlic powder, paprika, and salt and pepper to taste. Toss thoroughly so each floret is lightly coated.
- Spread the cauliflower in a single layer on the prepared baking sheet. Roast in the preheated oven for 20–25 minutes, flipping once halfway through, until golden-brown and crispy.
- Remove the pan from the oven and sprinkle shredded cheddar cheese evenly over the hot cauliflower. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly. Garnish with fresh parsley if desired and serve warm.
Notes
Dry florets ensure crisp results. Don’t overcrowd the pan and use a high oven temperature for best results.
