Description
A creamy, hands-off weeknight dinner featuring tender beef, sweet onion, bell pepper, tortellini, and provolone cheese.

- 1 pound beef steak, sliced thinly
- 1 onion, sliced
- 1 bell pepper, sliced
- 8 ounces tortellini, uncooked
- 2 cups beef broth
- 1 cup provolone cheese, shredded
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
Instructions
- Slice the beef thin across the grain to ensure it cooks tender. Peel and slice the onion and core and slice the bell pepper. Measure your beef broth and shred the provolone if needed.
- In the crock pot, combine the sliced beef steak, sliced onion, and sliced bell pepper. Add the beef broth and Worcestershire sauce, then stir well to coat the meat and vegetables. Season lightly with salt and pepper.
- Cover and cook on low for 6 to 8 hours or on high for 4 to 5 hours. The beef should be tender and the vegetables soft.
- About 30 minutes before serving, add the uncooked tortellini and mix well. Once the tortellini is cooked (about 20–30 minutes), stir in the provolone cheese until melted and smooth. Taste and adjust salt and pepper before serving.
Notes
For added flavor, you can sear the beef before adding it to the crock pot. Use low-sodium broth for better control over salt levels.
