Ingredients

- 4 chicken thighs or breasts
- 4 medium potatoes, diced
- 4 carrots, sliced
- 1 onion, chopped
- 4 cups chicken broth
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Place the diced potatoes, carrots, and chopped onion in the bottom of the crockpot to create a vegetable bed.
- Season the chicken with salt, pepper, dried thyme, and rosemary, rubbing the seasonings over each piece.
- Place the seasoned chicken on top of the vegetables. Add the minced garlic and pour the chicken broth over everything. Cover and cook on low for 6–8 hours.
- Check seasoning and adjust salt or pepper. Serve warm, spooning broth and vegetables over the chicken.
Notes
Serve with crusty bread or over egg noodles or rice for a heartier meal. Store leftovers in an airtight container.
