Description

A comforting and easy slow cooker recipe for French onion soup, topped with crispy baguette and melted Gruyère cheese.


Ingredients

  • 4 large onions, thinly sliced
  • 4 cups beef broth
  • 1 cup white wine
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme (dried or fresh)
  • 1 loaf of French baguette, sliced
  • 2 cups shredded Gruyère cheese

Instructions

  1. In a skillet, heat olive oil and butter over medium heat. Add sliced onions and cook until deep golden and caramelized, about 20 minutes. Stir in sugar, salt, and pepper near the end.
  2. Transfer the caramelized onions to the slow cooker. Add beef broth, white wine, and thyme. Stir to combine and adjust seasoning if needed.
  3. Cover and cook on low for 6–8 hours, until onions are tender and broth is flavorful.
  4. To serve, ladle soup into oven-safe bowls. Top with baguette slices and shredded Gruyère. Broil until cheese bubbles and turns golden brown.

Notes

Cool soup completely before storing in an airtight container for up to 4 days in the refrigerator. For freezing, keep in airtight containers for up to 3 months and thaw overnight in the fridge before reheating.
