An easy and comforting weeknight meal featuring tender chicken simmered in a sweet and savory teriyaki sauce, complemented by bright bell peppers and broccoli.

- 4 boneless, skinless chicken breasts
- 1 cup teriyaki sauce
- 2 tablespoons honey
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- 1 cup sliced bell peppers
- 1 cup broccoli florets
- Cooked rice, for serving
- Green onions, for garnish
Instructions
- Layer the chicken breasts in the bottom of the crockpot.
- Mix teriyaki sauce, honey, garlic, and ginger in a bowl, then pour over the chicken.
- Add sliced bell peppers and broccoli on top.
- Cover and cook on low for 4–6 hours until chicken is tender.
- Shred the chicken in the crockpot and stir to combine with sauce and vegetables. Serve over cooked rice and garnish with green onions.
Notes
For crisper vegetables, add them halfway through cooking. Use similar-sized chicken breasts for even cooking.
