Description

A delightful fusion of crispy filo pastry filled with savory lentils and mixed vegetables, spiced with aromatic curry powder. Perfect for family dinners or trying something new.


Ingredients

  • Filo pastry sheets
  • 1 cup cooked lentils
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • Salt and pepper to taste
  • Olive oil for brushing
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the onion and garlic in olive oil until soft.
  3. Add the mixed vegetables and cooked lentils, stir in the curry powder, salt, and pepper, and cook until heated through.
  4. Lay a sheet of filo pastry in a baking dish, brush with olive oil, and repeat with several layers.
  5. Place the lentil mixture in the center of the pastry.
  6. Fold the sides of the pastry over the filling and cover with more filo sheets, brushing each layer with olive oil.
  7. Bake for 25-30 minutes or until golden brown.
  8. Let it cool slightly, garnish with fresh cilantro, and serve.

Notes

Keep the filo pastry covered with a damp cloth while working to prevent drying out. You can substitute lentils with chickpeas or customize vegetables by season.
