- 1 cup cooked lentils
- 1 cup mixed vegetables (carrots, peas, corn)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- Salt and pepper to taste
- Olive oil for brushing
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, sauté the onion and garlic in olive oil until soft.
- Add the mixed vegetables and cooked lentils, stir in the curry powder, salt, and pepper, and cook until heated through.
- Lay a sheet of filo pastry in a baking dish, brush with olive oil, and repeat with several layers.
- Place the lentil mixture in the center of the pastry.
- Fold the sides of the pastry over the filling and cover with more filo sheets, brushing each layer with olive oil.
- Bake for 25-30 minutes or until golden brown.
- Let it cool slightly, garnish with fresh cilantro, and serve.
Notes
Keep the filo pastry covered with a damp cloth while working to prevent drying out. You can substitute lentils with chickpeas or customize vegetables by season.
