  • 6 ounces bittersweet chocolate, chopped
  • 3 large eggs, separated

Instructions

  1. Melt the chocolate in a heatproof bowl over simmering water. Stir until smooth and set aside to cool slightly.

  3. In another bowl, whisk the egg yolks with sugar until pale. Stir in the melted chocolate and vanilla extract until well combined.
  4. Gently fold in the whipped cream to the chocolate mixture.
  5. In a clean bowl, beat the egg whites with salt until stiff peaks form and gently fold into the chocolate mixture.
  6. Pour the mousse into a cake pan and refrigerate for at least 4 hours or until set.
  7. Before serving, garnish with chocolate shavings or a dusting of cocoa powder.
