- 6 ounces bittersweet chocolate, chopped
- 3 large eggs, separated

Instructions
- Melt the chocolate in a heatproof bowl over simmering water. Stir until smooth and set aside to cool slightly.
- In a separate bowl, whip the heavy cream until soft peaks form.
- In another bowl, whisk the egg yolks with sugar until pale. Stir in the melted chocolate and vanilla extract until well combined.
- Gently fold in the whipped cream to the chocolate mixture.
- In a clean bowl, beat the egg whites with salt until stiff peaks form and gently fold into the chocolate mixture.
- Pour the mousse into a cake pan and refrigerate for at least 4 hours or until set.
- Before serving, garnish with chocolate shavings or a dusting of cocoa powder.
