- 1 lb beef (cut into bite-sized pieces)
- 1 onion (chopped)
- 1 bell pepper (chopped)
- 2 cloves garlic (minced)
- 1 can diced tomatoes (14.5 oz)
- 1 cup long grain rice
- 2 cups beef broth
- 1 tsp paprika
- 1 tsp thyme
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 2 green onions (sliced, for garnish)
- Oil for cooking
Instructions
- Heat a large pot over medium heat and add a splash of oil. Pat beef pieces dry and season lightly with salt and pepper.
- Add the beef to the hot pot and brown for about 5–7 minutes, stirring occasionally.
- Add the chopped onion, bell pepper, and minced garlic to the pot. Cook until softened, about 4–5 minutes.
- Stir in the diced tomatoes, rice, beef broth, paprika, thyme, cayenne pepper, and additional salt and pepper. Mix well.
- Bring to a boil, then reduce heat to low. Cover and simmer for 20–25 minutes.
- Remove from heat and let rest for 5 minutes. Fluff the rice with a fork and garnish with sliced green onions before serving.
Notes
Serve hot on its own or with crusty bread. For a lighter meal, add a side salad or roasted vegetables.
