Easy Boursin Chicken

Description

A simple weeknight dish featuring creamy herbed Boursin cheese, tender seared chicken, fresh cherry tomatoes, and wilted spinach.


Ingredients

  • 4 chicken breasts
  • 8 oz Boursin cheese
  • 1 cup spinach (fresh)
  • 1 cup cherry tomatoes (halved)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Pat the chicken breasts dry and season both sides with salt and pepper. Prepare the spinach and halve the cherry tomatoes.
  2. Heat olive oil in a large skillet over medium heat. Add the seasoned chicken and sear until golden, about 4–5 minutes.
  3. Flip the chicken and sear the other side until golden, about 3–4 minutes. Remove chicken and place in a baking dish. Spread Boursin cheese over each breast and scatter spinach and tomatoes around.
  4. Bake for 25–30 minutes until the internal temperature reaches 165°F (74°C). Let rest for 5 minutes before serving.

Notes

Serve over pasta, rice, or mashed potatoes. Refrigerate leftovers in an airtight container for up to 3–4 days.
