Description
A simple weeknight dish featuring creamy herbed Boursin cheese, tender seared chicken, fresh cherry tomatoes, and wilted spinach.

- 4 chicken breasts
- 8 oz Boursin cheese
- 1 cup spinach (fresh)
- 1 cup cherry tomatoes (halved)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Pat the chicken breasts dry and season both sides with salt and pepper. Prepare the spinach and halve the cherry tomatoes.
- Heat olive oil in a large skillet over medium heat. Add the seasoned chicken and sear until golden, about 4–5 minutes.
- Flip the chicken and sear the other side until golden, about 3–4 minutes. Remove chicken and place in a baking dish. Spread Boursin cheese over each breast and scatter spinach and tomatoes around.
- Bake for 25–30 minutes until the internal temperature reaches 165°F (74°C). Let rest for 5 minutes before serving.
Notes
Serve over pasta, rice, or mashed potatoes. Refrigerate leftovers in an airtight container for up to 3–4 days.
