Easy Cheesy Ground Beef Quesadillas

Description

A quick weeknight favorite featuring savory ground beef and gooey cheese in crispy tortillas.


Ingredients

  • 1 lb ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Cooking oil for frying

Instructions

  1. Heat a skillet over medium heat and add about 1 tablespoon of cooking oil. Chop the onion and bell pepper into small pieces so they soften quickly. Have the shredded cheese and tortillas ready.
  2. Add the chopped onion and bell pepper to the hot skillet. Sauté until softened and fragrant, about 3–4 minutes. Add the ground beef, breaking it up with a spatula. Sprinkle in the garlic powder, chili powder, salt, and pepper. Cook, stirring occasionally, until the beef is fully browned and cooked through, about 6–8 minutes.
  3. Remove the beef mixture from the skillet and set aside in a bowl. Wipe the skillet lightly if needed and return it to medium heat with a touch of oil. Place one tortilla in the skillet. Sprinkle cheese over half of the tortilla, add a portion of the beef mixture on top of the cheese, then fold the tortilla over to close. Cook 2–3 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the cheese has melted.
  4. Repeat the assembly and cooking with the remaining tortillas and filling. Let each cooked quesadilla rest 1 minute, then cut into wedges. Serve warm with your favorite sides.

Notes

Serve with salsa, guacamole, or sour cream for dipping. Good options include a simple green salad or shredded lettuce for crunch.
