A quick weeknight favorite featuring savory ground beef and gooey cheese in crispy tortillas.

- 1 lb ground beef
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1 small onion, chopped
- 1 bell pepper, chopped
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- Salt and pepper to taste
- Cooking oil for frying
Instructions
- Heat a skillet over medium heat and add about 1 tablespoon of cooking oil. Chop the onion and bell pepper into small pieces so they soften quickly. Have the shredded cheese and tortillas ready.
- Add the chopped onion and bell pepper to the hot skillet. Sauté until softened and fragrant, about 3–4 minutes. Add the ground beef, breaking it up with a spatula. Sprinkle in the garlic powder, chili powder, salt, and pepper. Cook, stirring occasionally, until the beef is fully browned and cooked through, about 6–8 minutes.
- Remove the beef mixture from the skillet and set aside in a bowl. Wipe the skillet lightly if needed and return it to medium heat with a touch of oil. Place one tortilla in the skillet. Sprinkle cheese over half of the tortilla, add a portion of the beef mixture on top of the cheese, then fold the tortilla over to close. Cook 2–3 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the cheese has melted.
- Repeat the assembly and cooking with the remaining tortillas and filling. Let each cooked quesadilla rest 1 minute, then cut into wedges. Serve warm with your favorite sides.
Notes
Serve with salsa, guacamole, or sour cream for dipping. Good options include a simple green salad or shredded lettuce for crunch.
