Description

Buttery cookies filled with sweet dulce de leche and warm cinnamon flavor, perfect for a cozy treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup dulce de leche

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Cream together the softened butter and sugar until light and fluffy, about 2–3 minutes with a hand mixer or 4–5 minutes by hand.
  3. Add the egg and vanilla extract, and mix until fully combined.
  4. Whisk together the flour, baking powder, ground cinnamon, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring until the dough comes together and is smooth.
  6. Roll the dough into tablespoon-sized balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Flatten each ball slightly with a fork or the bottom of a glass.
  8. Bake for 10–12 minutes, or until the edges are lightly golden and the centers are set.
  9. Remove from the oven and let the cookies cool on the sheet for a few minutes.
  10. Transfer the cookies to a wire rack to cool completely.
  11. Spread about 1 to 1 1/2 teaspoons of dulce de leche on the flat side of one cookie and top with another cookie.
  12. Press gently to spread the filling to the edge.

Notes

Store cookies in an airtight container. They can be refrigerated for up to 2 weeks or frozen for up to 2 months.
