Celebrate Easter with these colorful and fun Easy Easter Funfetti Cake Pops that are simple to make and deliciously nostalgic.


Ingredients

  • 1 box funfetti cake mix
  • 1/2 cup unsweetened applesauce
  • 1/2 cup water
  • 2 large eggs
  • 1 cup vanilla frosting
  • 12 oz chocolate melts (white or colored)
  • Sprinkles for decoration
  • Lollipop sticks

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, combine the funfetti cake mix, applesauce, water, and eggs. Mix until well blended.
  3. Pour the batter into the prepared pan and bake according to package instructions, usually around 25-30 minutes. Allow the cake to cool completely.
  4. Once cooled, crumble the cake into a large bowl and mix in the vanilla frosting until fully combined. Roll the mixture into small balls and place on a baking sheet lined with parchment paper. Freeze the cake balls for about 30 minutes to firm them up.
  5. Melt the chocolate melts according to package instructions. Dip the end of each lollipop stick into the melted chocolate, then insert it into a cake ball. Dip each cake pop into the melted chocolate, allowing excess to drip off. Immediately sprinkle with toppings and place in a styrofoam block or upright position to set. Let the chocolate cool and harden before serving.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days. In warmer climates, refrigerate for longer freshness.
