- 4 boneless, skinless chicken breasts
- 2 cups mixed vegetables (like broccoli, bell peppers, and carrots)
- 4 tablespoons butter
- 4 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon dried thyme (optional)
- 1 teaspoon paprika (optional)
- Fresh parsley for garnish (optional)
Instructions
- In a large skillet, melt 2 tablespoons of butter over medium heat. Season the chicken breasts on both sides with salt, pepper, dried thyme, and paprika.
- Add the seasoned chicken breasts to the skillet and cook for about 5-7 minutes on each side until golden brown and fully cooked through (internal temperature should reach 165°F / 75°C).
- Remove the chicken from the skillet and set aside. In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 1 minute until fragrant.
- Add the mixed vegetables and cook until tender yet vibrant, about 5-7 minutes.
- Return the cooked chicken to the skillet, stir everything together, and heat through for an additional 2 minutes. Garnish with fresh parsley before serving.
Notes
You can customize with your favorite vegetables or seasonings. Serve over rice or alongside crusty bread.
