Ingredients

  • 2 chicken breasts
  • 2 tablespoons miso paste
  • 1 inch ginger, grated
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon chili flakes
  • 1 green onion, chopped
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together the miso paste, grated ginger, minced garlic, soy sauce, and sesame oil until well-combined.
  2. Coat each chicken breast with the miso mixture, ensuring they are fully covered. Let the chicken marinate for 30 minutes.
  3. In a large pot, heat the chicken broth over medium heat until it begins to simmer. Add the marinated chicken breasts and cook for 15-20 minutes, or until fully cooked.
  4. Remove the chicken, slice into bite-sized pieces, and return to pot. Stir in chili flakes and adjust seasoning with salt and pepper. Serve hot, garnished with green onions.

Notes

For vegetarian option, substitute chicken with tofu and use vegetable broth. Adjust spice level to preference.
