Ingredients

  • 1 rotisserie chicken, shredded
  • 1 package (16 oz) potato gnocchi
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups spinach
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth and bring it to a boil. Add the potato gnocchi and Italian seasoning, reduce heat, and let simmer until the gnocchi float, about 3-5 minutes.
  4. Add the shredded rotisserie chicken and fresh spinach. Mix in the heavy cream and heat through. Season with salt and pepper to taste. Serve hot.

Notes

For added flavor, top with grated Parmesan cheese or fresh herbs. Store leftovers in an airtight container for up to 3 days.
