Description

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup eggnog
  • 1/2 cup granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)
  • Chocolate or caramel for filling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, salt, 1 teaspoon cinnamon, and 1/2 teaspoon nutmeg. In another bowl, cream butter with 1 cup granulated sugar and 1/2 cup brown sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and eggnog until combined. Gradually add dry ingredients, mixing until just combined.
  4. Combine 1/2 cup sugar and 1 teaspoon cinnamon for rolling. Scoop tablespoon-sized balls of dough, roll in cinnamon-sugar mixture, and place on prepared sheets, 2 inches apart. Press an indentation in the center with your thumb.
  5. Bake for 10–12 minutes until edges are golden. Cool for 5 minutes, then transfer to a wire rack. Fill the centers with chocolate or caramel if desired.

Store cookies in an airtight container for up to 4 days at room temperature or 1 week in the refrigerator.
