Description

Delicious homemade English muffins with a crispy exterior and a soft, airy interior, perfect for toasting and topping.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup bread flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 packet instant yeast
  • 1 cup milk
  • 2 tablespoons unsalted butter
  • Cornmeal (for sprinkling)

Instructions

  1. In a large bowl, combine all-purpose flour, bread flour, sugar, salt, and instant yeast. Mix well.
  2. In a saucepan, gently heat milk and butter until warm. Stir into the dry ingredients until a sticky dough forms.
  3. Transfer the dough onto a floured surface and knead for about 5 minutes until smooth. Place in a greased bowl, cover, and let it rise in a warm place for about 1 hour.
  4. Punch down the dough and roll to 1-inch thickness. Cut out rounds using a biscuit cutter. Sprinkle cornmeal on a baking sheet and arrange muffin rounds. Cover and let rise for another 30 minutes.
  5. Preheat a skillet over medium heat and cook muffin rounds for 5-7 minutes on each side until golden brown.
  6. Transfer to a wire rack and let cool before slicing.

Notes

For best results, ensure the milk is warm enough to activate the yeast. Knead well for better structure.
