- 2 cups all-purpose flour
- 1 cup bread flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 packet instant yeast
- 1 cup milk
- 2 tablespoons unsalted butter
- Cornmeal (for sprinkling)
Instructions
- In a large bowl, combine all-purpose flour, bread flour, sugar, salt, and instant yeast. Mix well.
- In a saucepan, gently heat milk and butter until warm. Stir into the dry ingredients until a sticky dough forms.
- Transfer the dough onto a floured surface and knead for about 5 minutes until smooth. Place in a greased bowl, cover, and let it rise in a warm place for about 1 hour.
- Punch down the dough and roll to 1-inch thickness. Cut out rounds using a biscuit cutter. Sprinkle cornmeal on a baking sheet and arrange muffin rounds. Cover and let rise for another 30 minutes.
- Preheat a skillet over medium heat and cook muffin rounds for 5-7 minutes on each side until golden brown.
- Transfer to a wire rack and let cool before slicing.
Notes
For best results, ensure the milk is warm enough to activate the yeast. Knead well for better structure.
