A delightful, gluten-free banana bread made without flour, combining the rich flavors of ripe bananas and warm cinnamon.

- 3 ripe bananas
- 2 cups almond flour
- 3 eggs
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 cup maple syrup or honey
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- 1 tablespoon coconut oil (for greasing)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan with coconut oil.
- Mash the ripe bananas in a large bowl until smooth.
- Add eggs, maple syrup, and cinnamon to the mashed bananas, mixing well.
- Stir in almond flour, baking soda, and salt until combined. Fold in walnuts if using.
- Pour half of the batter into the prepared loaf pan and sprinkle with cinnamon. Add the remaining batter and swirl gently.
- Bake for 45-50 minutes, or until a toothpick inserted comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack to cool completely.
Notes
Serve warm or at room temperature, possibly with almond butter or cream cheese.
