Description

A delightful, gluten-free banana bread made without flour, combining the rich flavors of ripe bananas and warm cinnamon.


Ingredients

  • 3 ripe bananas
  • 2 cups almond flour
  • 3 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 cup maple syrup or honey
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • 1 tablespoon coconut oil (for greasing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with coconut oil.
  2. Mash the ripe bananas in a large bowl until smooth.
  3. Add eggs, maple syrup, and cinnamon to the mashed bananas, mixing well.
  4. Stir in almond flour, baking soda, and salt until combined. Fold in walnuts if using.
  5. Pour half of the batter into the prepared loaf pan and sprinkle with cinnamon. Add the remaining batter and swirl gently.
  6. Bake for 45-50 minutes, or until a toothpick inserted comes out clean.
  7. Allow to cool for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm or at room temperature, possibly with almond butter or cream cheese.
