  • 2 cups almond flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons honey or maple syrup (optional)
  • 1 tablespoon coconut oil or butter (for greasing)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan with coconut oil or butter.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Add almond flour, eggs, vanilla extract, baking soda, cinnamon, salt, and honey or maple syrup (if using). Mix until well combined.
  4. Pour half of the batter into the greased loaf pan, sprinkle with cinnamon, layer the remaining batter, and swirl gently with a toothpick.
  5. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
