Ingredients

- 1 cup cottage cheese
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 large eggs
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- Butter or oil for cooking
Instructions
- In a bowl, mix the cottage cheese, eggs, sugar, and vanilla extract until well combined. Optionally pulse in a blender for a smoother batter.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually fold in the dry ingredients until just combined.
- Heat a skillet over medium heat and add butter or oil. Pour 1/4 cup of batter for each pancake. Cook until bubbles form, about 2 to 3 minutes, then flip and cook until golden brown.
- Serve warm with your favorite toppings and keep cooked pancakes in a single layer covered loosely with foil until done.
Notes
For extra fluffy pancakes, avoid overmixing and you can add variety with fruits or nuts.
