Description

Quick and comforting baked chicken meatballs with a light garlic-parmesan flavor, perfect for any night of the week.


Ingredients

  • 1 lb ground chicken
  • 1 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Carrots, for serving
  • Yogurt, for dipping

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Mince the garlic, chop the parsley, and set out a large mixing bowl and a scoop or tablespoon for portioning.
  2. Combine ground chicken, bread crumbs, grated Parmesan, chopped parsley, egg, minced garlic, and a pinch of salt and pepper in the large bowl. Mix gently but thoroughly until all ingredients are evenly distributed.
  3. Scoop portions of the mixture (about 1 to 1.5 tablespoons each) and form them loosely into balls. Place the meatballs on the prepared baking sheet, spaced slightly apart. Bake in the preheated oven for 20–25 minutes, until cooked through and golden brown.
  4. Let the meatballs rest for 5 minutes after baking, then serve warm with carrot sticks and yogurt for dipping. Optionally, sprinkle extra parsley and Parmesan on top.

Notes

For a crispier finish, broil for 1-2 minutes at the end of baking. These meatballs can be tuned with various herbs or spices.
