A cozy one-pot meal combining caramelized onions, tender chicken, and creamy orzo.

- 1 pound boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 large onions, thinly sliced
- 4 cups beef broth
- 1 cup shredded Gruyère cheese
- 2 tablespoons olive oil
- 2 teaspoons thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat 2 tablespoons olive oil in a large pot over medium heat. Slice the onions thinly. Season chicken breasts with salt and pepper.
- Add the sliced onions to the pot and stir to coat with oil. Cook slowly, stirring occasionally to achieve an even brown color.
- Continue cooking the onions until caramelized, about 20–30 minutes. Push onions to the side, add the seasoned chicken, and sear both sides for 3–4 minutes.
- Stir in 2 teaspoons thyme and 1 cup orzo, then pour in 4 cups beef broth. Bring to a simmer and cook until orzo is tender, about 10–12 minutes.
- Stir in 1 cup shredded Gruyère cheese until melted and creamy. Adjust salt and pepper as necessary. Serve warm, garnished with fresh parsley.
Notes
Serve with a crisp green salad or roasted vegetables. Can be stored in the refrigerator for 3-4 days or frozen for up to 2 months.
