- 4 large onions, thinly sliced
- 4 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup dry white wine
- 8 cups beef broth
- 1 tablespoon flour
- 1 bay leaf
- 1 teaspoon thyme
- 8 slices French bread
- 2 cups grated Gruyère cheese
Instructions
- In a large pot, melt the butter and olive oil over medium heat. Add the onions, sugar, and salt. Cook, stirring frequently, until the onions are caramelized, about 30-40 minutes.
- Sprinkle the flour over the onions and cook for an additional minute, stirring to combine.
- Add the white wine to the pot, scraping the bottom to release any caramelized bits. Next, pour in the beef broth, add the bay leaf and thyme. Bring the mixture to a simmer and let it cook for about 20 minutes, allowing the flavors to develop.
- Preheat your broiler. Ladle the soup into oven-safe bowls, top each with a slice of French bread, and sprinkle generously with Gruyère cheese. Place under the broiler until the cheese is melted and bubbly, around 2-3 minutes. Serve hot, and enjoy!
Notes
Use sweet onions like Vidalia for richer sweetness. For a vegetarian version, swap beef broth for vegetable broth.
