Ingredients

  • 2 pounds potatoes, peeled and diced
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon mustard
  • 1/2 cup chopped green onions
  • 1/2 cup cooked bacon, crumbled
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Boil the diced potatoes in salted water until tender, about 10–15 minutes. Drain well and let cool until you can handle them.
  2. In a bowl, mix together mayonnaise, sour cream, and mustard. Stir in chopped green onions and crumbled bacon. Season with salt and pepper.
  3. Once the potatoes are cool, fold them gently into the dressing until coated but not smashed. Form the mixture into patties (about 2–3 inches across).
  4. Heat a thin layer of oil in a pan over medium heat. Fry the patties in batches, about 3–4 minutes per side, until golden brown and crisp.
  5. Remove patties from the pan and drain briefly on paper towels. Serve warm, garnished with extra green onions or a sprinkle of chopped bacon if desired.
