- 6 eggs
- 1/2 cup milk
- 1 cup chopped vegetables (bell peppers, spinach, mushrooms)
- 1 cup cheese (feta or cheddar)
- Salt, to taste
- Pepper, to taste
- Olive oil or butter, for cooking
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Heat olive oil or butter in an oven-safe skillet over medium heat. Add chopped vegetables and sauté for about 5 minutes until they soften.
- Pour the egg mixture over the sautéed vegetables, allowing it to cook undisturbed until the edges begin to set.
- Sprinkle cheese on top, then transfer the skillet to the oven and bake for 15-20 minutes until set and lightly golden.
- Allow to cool slightly, slice, and serve.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 2 months.
