A fun and colorful dessert that turns classic sushi into a playful treat with fruity cereal and fresh berries.

- 1 cup sushi rice
- 1 1/4 cups water
- 2 tablespoons sugar
- 1 tablespoon rice vinegar
- 3 sheets nori
- 1/2 cup Fruity Pebbles cereal
- 1/2 cup sliced strawberries
- 1/2 cup sliced bananas
- 1/2 cup whipped cream (optional)
Instructions
- Rinse the sushi rice under cold water until it runs clear, then drain. Slice the strawberries and bananas and set them on a paper towel to remove excess moisture. Lay out a bamboo sushi mat or a clean flat surface and place a sheet of nori on it.
- In a saucepan, combine the rinsed rice and water; bring to a boil. In a small bowl, mix the sugar and rice vinegar so the sugar starts to dissolve.
- Once the rice is boiling, reduce the heat to low, cover, and simmer for about 20 minutes until the water is absorbed. Remove from heat and stir the vinegar-sugar mixture into the hot rice. Spread the rice on a tray to cool to room temperature, fluffing gently so it loses steam faster.
- Spread a thin, even layer of cooled sushi rice over the nori, leaving a 1-inch edge at the top. Sprinkle a line of Fruity Pebbles over the rice, then add slices of strawberries and bananas in a neat row. Using the mat, roll the sushi away from you, pressing gently but firmly. Seal the edge with a little water. Slice into bite-sized pieces with a sharp knife, wiping the blade between cuts. Serve with whipped cream if desired.

Best served immediately for optimal crunchiness. Keep fruit dry to prevent sogginess.
