Description

A fun and colorful dessert that turns classic sushi into a playful treat with fruity cereal and fresh berries.


Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 2 tablespoons sugar
  • 1 tablespoon rice vinegar
  • 3 sheets nori
  • 1/2 cup Fruity Pebbles cereal
  • 1/2 cup sliced strawberries
  • 1/2 cup sliced bananas
  • 1/2 cup whipped cream (optional)

Instructions

  1. Rinse the sushi rice under cold water until it runs clear, then drain. Slice the strawberries and bananas and set them on a paper towel to remove excess moisture. Lay out a bamboo sushi mat or a clean flat surface and place a sheet of nori on it.
  2. In a saucepan, combine the rinsed rice and water; bring to a boil. In a small bowl, mix the sugar and rice vinegar so the sugar starts to dissolve.
  3. Once the rice is boiling, reduce the heat to low, cover, and simmer for about 20 minutes until the water is absorbed. Remove from heat and stir the vinegar-sugar mixture into the hot rice. Spread the rice on a tray to cool to room temperature, fluffing gently so it loses steam faster.
  4. Spread a thin, even layer of cooled sushi rice over the nori, leaving a 1-inch edge at the top. Sprinkle a line of Fruity Pebbles over the rice, then add slices of strawberries and bananas in a neat row. Using the mat, roll the sushi away from you, pressing gently but firmly. Seal the edge with a little water. Slice into bite-sized pieces with a sharp knife, wiping the blade between cuts. Serve with whipped cream if desired.

Notes

Best served immediately for optimal crunchiness. Keep fruit dry to prevent sogginess.
