Instructions
- Preheat the oven to 400°F (200°C). Wash the potatoes thoroughly and pat them dry. Line a baking sheet with parchment paper.
- Slice the potatoes into thin rounds about 1/8–1/4 inch thick. Toss the potato slices with olive oil, minced garlic, salt, and pepper until coated.
- Arrange the potato slices in a single layer on the baking sheet, ensuring minimal overlap. Bake for 25–30 minutes until golden and tender, flipping halfway through.
- Remove from the oven and immediately sprinkle with Parmesan cheese. Return to the oven for an additional 5 minutes or until the cheese melts and turns light golden. Garnish with parsley and serve with sour cream and chives if desired.
