- 1 package gnocchi
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 2 cups spinach
- 1 cup diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Prepare the onion by peeling and dicing it. Mince the garlic. Open the gnocchi and the diced tomatoes. Rinse the spinach and set aside. Measure the broth and Italian seasoning.
- Sauté 1 tablespoon olive oil in a large pot over medium heat. Add the diced onion and minced garlic; sauté until translucent and sweet-smelling, about 3–4 minutes.
- Pour in 4 cups of broth and bring to a gentle boil. Add the gnocchi and cook according to package instructions, about 2–3 minutes after they float.
- Stir in 1 cup diced tomatoes, 2 cups spinach, and 1 teaspoon Italian seasoning. Cook until spinach wilts and everything is heated through. Taste and season with salt and pepper. Serve hot with grated Parmesan on top.
Notes
Serve with a drizzle of olive oil or red pepper flakes for heat. Pairs well with crusty bread or a simple green salad.
