- 1 pie crust
- 4 large eggs
- 1 cup heavy cream
- 1 cup crumbled goat cheese
- 1 cup spinach (fresh or cooked)
- 1/2 cup onion (chopped)
- Salt and pepper to taste
- Herbs (such as thyme or chives, optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Place the pie crust in a pie dish and prick the bottom with a fork. Bake for about 10 minutes until lightly golden. Allow it to cool slightly.
- In a bowl, whisk together the eggs and heavy cream. Season with salt and pepper to taste.
- In the baked pie crust, layer the spinach, chopped onion, and crumbled goat cheese.
- Pour the egg mixture over the layers in the crust.
- Optionally, sprinkle fresh herbs on top.
- Bake for 30-35 minutes or until the quiche is set and lightly browned on top.
- Let the quiche cool slightly before slicing and serving.
Notes
For a delicious touch, serve with a side salad or fruit. Leftovers can be stored in the fridge for up to 3 days.
