Description

A bright, peppery radish salad with arugula and parsley, perfect for spring as a fresh side dish.


Ingredients

  • 1 bunch of radishes
  • 2 cups arugula
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and trim the radishes, then slice them thinly for a delicate crunch.
  2. In a large bowl, combine the arugula, sliced radishes, red onion, and parsley. Toss gently.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
