Description

A warm, cinnamon-scented coffee cake that has a soft crumb, sweet cinnamon swirl, and is perfect for breakfast or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or nonstick spray.
  2. Whisk together the flour, sugar, baking powder, and salt in a bowl.
  3. Cream the butter, then add milk, eggs, and vanilla extract. Mix with the dry ingredients until just blended.
  4. Stir the ground cinnamon with brown sugar in a small bowl.
  5. Pour half of the batter into the prepared dish and spread it evenly.
  6. Sprinkle half of the cinnamon sugar mixture over the batter.
  7. Add the remaining batter and smooth the top, then sprinkle the remaining cinnamon sugar on top.
  8. Optionally sprinkle the chopped nuts across the top.
  9. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cake cool in the pan for about 10–15 minutes before slicing and serving.

Notes

Serve warm with coffee or tea, and dust with powdered sugar for added sweetness.
