- 1 lb chicken breast, sliced
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 4 pita bread or flatbreads
- 1 cup lettuce, shredded
- 1 tomato, diced
- 1/2 red onion, thinly sliced
- 1 cucumber, diced
- 1 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- Salt, to taste
Instructions
- In a bowl, mix the olive oil, dried oregano, garlic powder, salt, and pepper. Add the sliced chicken and toss to coat. Let the chicken marinate for at least 30 minutes in the fridge.
- While the chicken marinates, make the tzatziki by combining Greek yogurt, lemon juice, minced garlic, diced cucumber, and a pinch of salt in a bowl. Taste and adjust seasoning. Chill in the fridge.
- Preheat a grill or skillet over medium-high heat. Add marinated chicken and cook 5–7 minutes per side until cooked through and browned; internal temperature should be 165°F. Remove and let rest before slicing.
- Warm pita bread in a dry skillet or on the grill until soft. Assemble gyros with chicken, lettuce, tomato, onion, and tzatziki. Serve immediately.
Notes
For optimal texture, slice chicken against the grain. Adjust tzatziki to taste with lemon and salt. Keep flavors bright using fresh ingredients.
