Green Chile Chicken Quesadillas are a quick and satisfying meal combining seasoned shredded chicken, zesty green chiles, and melted cheese between crispy tortillas.

- 2 cups cooked chicken, shredded
- 1 cup green chiles, diced
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 8 large flour tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
- Sour cream for serving
- Salsa for serving
Instructions
- In a bowl, mix the shredded chicken, green chiles, and cheese. Season with salt and pepper to taste.
- Heat a skillet over medium heat and add olive oil.
- Place one tortilla in the skillet and spread about 1/2 cup of the chicken mixture on half of it. Fold the other half over.
- Cook until the tortilla is golden and crispy, about 3-4 minutes on each side.
- Remove from the skillet and let cool slightly before cutting into wedges.
- Serve with sour cream and salsa.
Notes
Use fresh tortillas for the best texture. Adjust spice level with mild or hot green chiles. Customize with extra veggies or different types of cheese.
