Ingredients

  • 2 cups cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 small red onion, diced
  • 1 cup fresh spinach

Instructions

  1. Boil the gnocchi in salted water according to package instructions until they float, about 2-3 minutes. Drain and cool.
  2. Toss the cooled gnocchi with olive oil, salt, and pepper until well coated.
  3. Preheat the grill to medium heat and grill gnocchi for 2-3 minutes on each side until golden brown.
