- 8 small tortillas
- 1 cup chimichurri sauce
- 1 cup diced onions
- 1 cup diced tomatoes
- 1 avocado, sliced
- Fresh cilantro, for garnish

Instructions
- Preheat the grill to medium-high heat. Season the flank steak generously with salt and pepper.
- Grill the steak for about 5-7 minutes on each side, aiming for 130°F (medium-rare) to 140°F (medium).
- Remove the steak from the grill and let it rest for a few minutes, then slice thinly against the grain.
- Warm the tortillas on the grill for about a minute on each side.
- Assemble the tacos with slices of grilled steak, chimichurri sauce, diced onions, diced tomatoes, and avocado slices.
- Garnish with fresh cilantro before serving.
Notes
