Ingredients

  • 1 pound flank steak
  • 8 small tortillas
  • 1 cup chimichurri sauce
  • 1 cup diced onions
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat. Season the flank steak generously with salt and pepper.
  2. Grill the steak for about 5-7 minutes on each side, aiming for 130°F (medium-rare) to 140°F (medium).
  3. Remove the steak from the grill and let it rest for a few minutes, then slice thinly against the grain.
  4. Warm the tortillas on the grill for about a minute on each side.
  5. Assemble the tacos with slices of grilled steak, chimichurri sauce, diced onions, diced tomatoes, and avocado slices.
  6. Garnish with fresh cilantro before serving.

Notes

These tacos are fantastic served warm with a side of lime wedges and extra chimichurri.
