Ingredients

  • 1 cup cottage cheese
  • 1 cup cooked rice or quinoa
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: chopped green onions or parsley for garnish

Instructions

  1. In a skillet, heat the olive oil over medium heat until shimmering.
  2. Add the ground beef, breaking it apart with a spatula. Cook until browned, about 8 minutes. Season with salt and pepper.
  3. Stir in the cooked rice or quinoa and diced tomatoes. Cook for 3-5 minutes until heated through.
