- 1 cup cooked rice or quinoa
- 1 cup diced tomatoes

- Optional: chopped green onions or parsley for garnish
Instructions
- In a skillet, heat the olive oil over medium heat until shimmering.
- Add the ground beef, breaking it apart with a spatula. Cook until browned, about 8 minutes. Season with salt and pepper.
- Stir in the cooked rice or quinoa and diced tomatoes. Cook for 3-5 minutes until heated through.
- Remove from heat and fold in the cottage cheese. Sprinkle shredded cheese on top, cover, and let it melt.
- Serve in bowls, garnished with green onions or parsley if desired.
