- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 1 can (15 oz) black beans, rinsed and drained
- 1 teaspoon cumin
- Salt and pepper to taste
- Sour cream and cilantro for serving (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef, onion, and garlic over medium heat until browned and onions are translucent; drain excess fat.
- Stir in 1 cup enchilada sauce, black beans, cumin, salt, and pepper; mix until well combined.
- Spoon the beef mixture onto each tortilla, sprinkle with cheese, roll them up tightly, and place seam-side down in a baking dish. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Serve hot, topped with sour cream and fresh cilantro if desired.
Notes
For added flavor, use ground beef that’s 80/20. Experiment with different types of cheese for a creamier texture.
