Description

Delightful and hearty enchiladas filled with seasoned ground beef, cheese, and zesty enchilada sauce, wrapped in soft flour tortillas. Perfect for weeknight dinners or gatherings.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Sour cream and cilantro for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef, onion, and garlic over medium heat until browned and onions are translucent; drain excess fat.
  3. Stir in 1 cup enchilada sauce, black beans, cumin, salt, and pepper; mix until well combined.
  4. Spoon the beef mixture onto each tortilla, sprinkle with cheese, roll them up tightly, and place seam-side down in a baking dish. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  5. Bake for 20-25 minutes until cheese is melted and bubbly.
  6. Serve hot, topped with sour cream and fresh cilantro if desired.

Notes

For added flavor, use ground beef that’s 80/20. Experiment with different types of cheese for a creamier texture.
