Description

A delightful dish featuring tender chicken thighs seasoned with spicy harissa paste and perfectly roasted potatoes. Simple to prepare and bursting with North African flavors.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons harissa paste
  • 2 tablespoons olive oil
  • 4 medium potatoes, cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together the harissa paste, olive oil, salt, and pepper.
  3. Add the chicken thighs to the bowl and coat them well with the harissa mixture.
  4. In a baking dish, combine the cubed potatoes, chopped onion, and minced garlic.
  5. Place the marinated chicken on top of the vegetables in the baking dish.
  6. Bake in the preheated oven for 35-40 minutes or until the chicken is cooked through and the potatoes are tender.
  7. Garnish with fresh parsley before serving.

Notes

For a milder flavor, reduce the amount of harissa or use a milder variety. Mix in seasonal vegetables for added nutrition and flavor.
