Description

A delightful Hawaiian Chicken recipe featuring tender chicken breasts marinated in a sweet and tangy pineapple mixture, grilled to perfection.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 cup diced fresh pineapple
  • 1 red bell pepper, diced
  • Green onions, for garnish

Instructions

  1. In a bowl, mix together pineapple juice, soy sauce, brown sugar, ginger, and garlic to create the marinade.
  2. Place the chicken breasts in a resealable bag and pour the marinade over them. Seal the bag tightly and refrigerate for at least 2 hours or overnight.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard it. Grill the chicken for about 6-7 minutes on each side until cooked through.
  4. Serve the grilled chicken garnished with grilled pineapple, red bell peppers, and green onions.

Notes

For best results, marinate the chicken overnight. Ensure chicken reaches an internal temperature of 165°F (75°C).
