- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 1 cup diced fresh pineapple
- 1 red bell pepper, diced
- Green onions, for garnish
Instructions
- In a bowl, mix together pineapple juice, soy sauce, brown sugar, ginger, and garlic to create the marinade.
- Place the chicken breasts in a resealable bag and pour the marinade over them. Seal the bag tightly and refrigerate for at least 2 hours or overnight.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard it. Grill the chicken for about 6-7 minutes on each side until cooked through.
- Serve the grilled chicken garnished with grilled pineapple, red bell peppers, and green onions.
Notes
For best results, marinate the chicken overnight. Ensure chicken reaches an internal temperature of 165°F (75°C).
