Ingredients

- 2 cups cooked chicken, shredded
- 1 cup uncooked brown rice
- 2 cups broccoli florets
- 2 cups low-sodium chicken broth
- 1 cup Greek yogurt
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt, to taste
- Pepper, to taste
- 1.5 cups shredded cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the cooked chicken, uncooked brown rice, broccoli, chicken broth, Greek yogurt, garlic powder, onion powder, salt, and pepper until well combined.
- Pour the mixture into a greased baking dish and spread it evenly, then sprinkle the shredded cheese on top. Cover with foil and bake for 30-35 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden. Let it cool slightly before serving.
Notes
Store leftovers in an airtight container for up to 3 days. Can be frozen for up to 3 months.
