- 1 cup brown rice
- 1 lb chicken breast, diced
- 2 medium sweet potatoes, diced
- 1 cup broccoli florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 teaspoon paprika
Instructions
- Start by cooking the brown rice according to the package instructions (30-35 minutes).
- Preheat the oven to 400°F (200°C). Toss sweet potatoes with 1 tablespoon of olive oil, garlic powder, salt, and pepper; roast for 25-30 minutes.
- In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the chicken, season with paprika, salt, and pepper, and cook for 7-10 minutes until browned.
- Steam the broccoli for about 5 minutes until vibrant and tender.
- Serve by layering rice in a bowl, topped with roasted sweet potatoes, sautéed chicken, and steamed broccoli.
