This Healthy Chicken & Sweet Potato Rice Bowl is packed with flavor, lean protein, and rich nutrients, making it perfect for lunch or dinner.


Ingredients

  • 1 cup brown rice
  • 1 lb chicken breast, diced
  • 2 medium sweet potatoes, diced
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 teaspoon paprika

Instructions

  1. Start by cooking the brown rice according to the package instructions (30-35 minutes).
  2. Preheat the oven to 400°F (200°C). Toss sweet potatoes with 1 tablespoon of olive oil, garlic powder, salt, and pepper; roast for 25-30 minutes.
  3. In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the chicken, season with paprika, salt, and pepper, and cook for 7-10 minutes until browned.
  4. Steam the broccoli for about 5 minutes until vibrant and tender.
  5. Serve by layering rice in a bowl, topped with roasted sweet potatoes, sautéed chicken, and steamed broccoli.
