- 1 lb ground beef
- 1 small head of cabbage, chopped
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp paprika
- 1 tsp Italian seasoning
Instructions
- Chop the cabbage into bite-size pieces, dice the carrots, chop the onion, and mince the garlic. Open the can of diced tomatoes and set aside.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté until soft and translucent, about 3–4 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it apart, about 6–8 minutes. Season with salt, pepper, paprika, and Italian seasoning.
- Stir in the diced carrots and chopped cabbage, and cook until the cabbage starts to wilt, about 5 minutes.
- Pour in the canned diced tomatoes (with juices), stir to combine, reduce heat to low, and let simmer for 10–15 minutes until carrots are tender and flavors meld.
Notes
Serve with rice, mashed potatoes, or crusty bread. For a lighter option, pair with a green salad and lemon. Store leftovers in an airtight container for up to 4 days.
