- 1 cup mixed nuts
- 1 cup mixed seeds
- 1 cup rolled oats
- 1/2 cup nut butter
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the mixed nuts, mixed seeds, and rolled oats.
- In a separate bowl, mix together the nut butter, honey (or maple syrup), vanilla extract, and salt until smooth.
- Pour the wet mixture into the dry mixture and stir until fully combined.
- Scoop out tablespoon-sized portions of the dough and place them on the prepared baking sheet, flattening them slightly.
- Bake for 10-12 minutes or until golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to a week or freeze for up to three months. Experiment with different nuts and seeds or add chocolate chips for variation.
