Description

Delicious and nutritious energy cookies made with a blend of nuts, seeds, and oats, perfect for a quick snack or light breakfast.


Ingredients

  • 1 cup mixed nuts
  • 1 cup mixed seeds
  • 1 cup rolled oats
  • 1/2 cup nut butter
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the mixed nuts, mixed seeds, and rolled oats.
  3. In a separate bowl, mix together the nut butter, honey (or maple syrup), vanilla extract, and salt until smooth.
  4. Pour the wet mixture into the dry mixture and stir until fully combined.
  5. Scoop out tablespoon-sized portions of the dough and place them on the prepared baking sheet, flattening them slightly.
  6. Bake for 10-12 minutes or until golden brown.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to a week or freeze for up to three months. Experiment with different nuts and seeds or add chocolate chips for variation.
