These Healthy Oatmeal Protein Cookies are a quick, chewy snack that tastes like a treat but feeds your muscles. They are made with oats, protein powder, almond butter, and sweetened naturally with banana and honey.

- 1 cup rolled oats
- 1/2 cup protein powder
- 1/2 cup almond butter (or any nut butter)
- 1/4 cup honey (or maple syrup)
- 1/2 banana, mashed
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- Optional: chocolate chips or nuts for mixing in
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the rolled oats, protein powder, and salt.
- In another bowl, combine the almond butter, honey, mashed banana, and vanilla extract; stir until smooth.
- Pour the wet ingredients into the dry ingredients and mix until well combined. Add chocolate chips or nuts if desired.
- Scoop tablespoon-sized amounts of the dough onto the prepared baking sheet, spacing them apart. Flatten each cookie slightly.
- Bake for 10–12 minutes, or until the edges are lightly golden and the centers look set.
- Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Store in an airtight container for up to 3 days at room temperature or up to 1 week in the refrigerator. For longer storage, freeze for up to 3 months.
